1 9x13 loaf

Ingredients

Directions

  1. Combine the dough ingredients and mix until a sticky, elastic dough forms.
  2. Transfer to a lightly oiled bowl. Rest for 20 minutes, then complete 3 rounds of stretch-and-folds, about 20โ€“30 minutes apart.
  3. Cover and refrigerate overnight, ideally 18โ€“24 hours, to develop flavor.
  4. Transfer the dough to a generously oiled 9ร—13 baking pan. Cover and let rise at room temperature until puffy, bubbly, and relaxed, approximately 2โ€“4 hours.
  5. Preheat oven to 425ยฐF. Drizzle with olive oil and gently dimple the dough. Arrange apple slices, cheddar cubes, and fresh thyme over the top. Sprinkle lightly with salt.
  6. Bake for approximately 25โ€“35 minutes, until golden brown and cooked through.
  7. Transfer to a wire rack to cool slightly before slicing.
This is a fun sweet-and-savory focaccia with crisp golden edges, a soft center, and plenty of sharp cheddar!
